Q: Why the name Nickel Brook Brewing?
A: Nickel Brook comes from the names of our co-founders two kids, Nick and Brooke.
Q: How long have you/the brewery been making beer for?
A: Nickel Brook has been brewing for 12 years. Originally under the name of Better Bitters; now it has a clean side and the Funk Lab where we specialise in wild and sour ferments. I have been working for Nickel Brook for 3 years now.
Q: What got you into brewing?
A: I Started home brewing with my Father when I was a child, I then made a mixture of rocket fuel cider and undrinkable homebrew at University before realising that maybe I should make my hobby into more of a profession and went to Niagara College.
Q: When you’re not brewing what are your hobbies?
A: I like to cook and BBQ a lot, while I’m no Guy Feiri in the kitchen I feel like I’m on my way there.
I also love to just relax and play video games, any excuse to put my feet up works for me. I find it very easy to switch off from work so I do not need much of an excuse to just have a beer.
Q: What’s your favourite style of beer?
A: A good citrusy IPA is my beer of choice.
Q: If you could only have one of your brews for the rest of your life, what would it be and why? (I know it’s like picking a favourite child!)
A: If I had to pick one of our beers for the rest of my days? Probably our Duplicitous Dry Hopped Gose. It is aggressively hopped with Citra so you know it is pure gold.
Q: You are in a supermarket, in the Beer aisle of course, what would you buy? (your wonderful beer isn’t on sale unfortunately!)
A: Cassel Brewery’s Golden Rail. Shout out to Jean-Francois Cardinal for producing such a quaffable brew.
Q: What new flavour combination would you love to try/what new hops would you like to work with?
A: At the moment with the run down from summer and all this great fresh fruit in harvest we’ve been mixing up fruit and hop combinations. Our Yellow plum and Mosaic Berliner Weisse was an amazing beer. Hopefully we’ll be able to mix and match trying out great combinations.
Q: What brewery you would like to collaborate with and why?
A: I recently travelled to Boston and did enjoy Trillium’s brews. They know what they are doing for sure.
