Q: Why the name The Wild Beer Co?
A: When we first came up with the idea for the brewery there was no one in the UK brewing with wild yeasts. The idea to base a brewery around wild yeast fermentations sits at the heart of what we do.

Q: How long have you/the brewery been making beer for?
A: The Wild Beer co. launched in late 2012.
Q: What got you into brewing?
A: Brett and I both got into brewing through food and hospitality. Brett was a chef, but when he moved to the UK, had a period when he couldn’t work, so started making beer at home. I worked in pubs, bars and restaurants, and grew my interest curating beer lists and sourcing rarities for the places I ran.

Q: When you’re not brewing what are your hobbies?
A: I run a business, I don’t have hobbies! Chasing around after my 6 year old son keeps me busy in my spare time.
Q: What’s your favourite style of beer?
A: I’m definitely an eclectic drinker, and don’t have one particular go-to style, I drink to the weather, the food, my mood… the classic Lambic beers of Belgium are the beers I probably revere the most.
Q: If you could only have one of your brews for the rest of your life, what would it be and why? (I know it’s like picking a favourite child!)
A: Modus Operandi, it was our first born, and epitomises everything we are about, barrel-ageing, wild yeasts, slow maturation, blending…
Q: You are in a supermarket, or bottle shop, in the beer section, what would you buy? (your wonderful beer isn’t on sale unfortunately!)
A: Depends on the time of year, or what I’m doing, but Kernel’s Table Beer is a regular favourite of mine.
Q: What new flavour combination would you love to try/what new hops would you like to work with?
A: I love fruit and spice combinations, we have a few projects for later in the year that have fruit and spice to them. We haven’t been looking too closely at new hop varieties recently, but we have been running some trials with some different hop blends, using hops that might not be often thought of using together.
Q: What brewery would you like to collaborate with and why?
A: We’re very excited about a couple of the collaborations we have coming up later this year, including Oud Beersel and Firestone Walker.
