Dog’s Window Brewery

Q: Why the name Dog’s Window Brewery?

A:  We adopted a Jack Russell form Dog’s Trust in 2012. Being sich a big part of the familyI wanted to include him in the brewery name somehow. His favourite place in the house is on the lounge windowsill, so went with the name “Dog’s Window”.

Q: How long have you/the brewery been making beer for?

A: We are a pretty new concern as a business, we launched in April 2018. As for brewing, not that much longer May 2017.

A good friend of mine is a local CAMRA rep and also runs a home delivery service called Wales Ales offered to stock my beer if I decided to sell it, so I took the leap to commercial brewing pretty quickly.

Q: What got you into brewing?

A: If I’m honest, I started really getting into craft beers and didn’t want to drink anything else. Not being used to paying the price of craft beer I decided to try making it myself.

Q: When you’re not brewing what are your hobbies?

A: I have two main hobbies. Firstly as well as the brewery I am a professional photographer, so photography is one. I photograph landscapes mainly as a hobby. The other hobby is Wing Chun, which is a type of Kung Fu. I have been training this for about 5 years now.

Q: What’s your favourite style of beer?

A: I have many favourite styles depending on the mood I am in, if I had to choose one, it would have to be American IPA. Especially on a summers day, it’s great to kick back with those tropical flavours.

Q: If you could only have one of your brews for the rest of your life, what would it be and why? (I know it’s like picking a favourite child!)

A: A really difficult choice, but I think I’d have to go with “Drop It” our American IPA

Q: You are in a supermarket, or bottle shop, in the beer section, what would you buy? (your wonderful beer isn’t on sale unfortunately!)

A: That’s a very tricky one as I never know what I will buy until I get there as like to try new beers all the time and usually look for something interesting when I am there.

Q: What new flavour combination would you love to try/what new hops would you like to work with?

A: I like a hint of orange in beer, so I would like to give Mandarina Bavaria a try. We are also working on a calaboration project with a local coffee roaster on different coffee infused beers.

Q: What brewery would you like to collaborate with and why?

A: I think it would be Verdant, they just do some amazing things with American hops. I’d love to be let loose with thier kit and ingredients.

Q: Any interesting stories?

A: Ah, yes actually! One of my popular beers called “Sit!” which I call a European pale ale was a complete fluke. I had recieved two packets of hops, one was Tettnang which was a free gift. the other was Bobek, which was delivered by mistake. Looking at the flavour profiles I concluded they should go well together.  After coming up with a grain bill that I was pretty certain would work well I brewed up a batch. this beer I am happy to say is scoring a solid 4 out of 5 on Untappd.
